Basil Chicken
½ cup chicken broth
2 tablespoons soy sauce
1 tablespoon fish sauce
1 ½ tablespoons brown sugar
1 ½ tablespoons rice vinegar
2 shallots, minced
½ a jalapeno, minced
4 cloves garlic, sliced
1 lb ground chicken
1 ½ cups basil leaves, torn into small pieces
Combine chicken broth , soy sauce, brown sugar, and rice vinegar in a small bowl or measuring cup.
Saute shallots and jalapeno. Add sliced garlic and cook for a few more minutes. Add ground chicken and brown. Deglaze pan with some water if needed. Pour in sauce and cook until liquid has reduced slightly. Add basil to pan and toss mixture until basil is wilted. Serve with rice and a fried egg.
Notes
Thai basil is best, but the dish also tastes fine with regular basil.
