Mom’s Prime Rib Roast

  • Prime Rib Roast, Bone-In Cut & Tied

Cooking tip. Leave the roast out for an hour before cooking. You want it to be room temperature. Then turn the oven on bake not broil 450F for 15 min. Then turn oven down to 350F. For a little pink 2 hours for a lot of pink 1 1/2 hours (from The Hungry Hunter Bible).

Additional Research — estimate about 15 min per lb. Every 1/2 hour baste the cut ends of the roast with the fat accumulated in the roasting pan. About 45 min before the estimated end of the roasting (bake) time, begin checking internal temperature.

Continue to cook the roast until your meat thermometer reads 120F. Remove the roast form the oven and let it rest for 20 min. It will read 130F after resting time.

Notes

The roast we used for Christmas lunch was approximately 10.17 lbs. The roast was left out for about two hours before baking. The roast was not basted as I wanted to avoid opening the oven frequently. Our roast was tied pre-seasoned (looked like a mix of salt, dried herbs, and black pepepr) by someone at Safeway and the roast was in our refrigerator for at least a day before it was baked. Estimation of baking 15 minutes per pound was accurate for cook time. Our roast was not too pink but we preferred it that way.
