Zucchini Bread Recipe

Yields one 9” x 5” loaf and about eight muffins

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 tablespoon ground cinnamon

  • 3 eggs

  • 1 cup vegetable oil

  • 1 cup white sugar

  • 1 cup brown sugar

  • 1 tablespoon vanilla extract

  • 2 cups finely grated zucchini

Preheat the oven to 325F.

Combine the flour, salt, baking soda, baking powder, and cinnamon in a bowl. Make a well in the center of the dry ingredients.

In a large bowl, beat together the eggs, oil, vanilla, white sugar, and brown sugar. Stir in the grated zucchini.

Add the liquid mixture to the well in the dry ingredients and stir until all ingredients are just combined.

Fill the loaf pan about 2/3 full and use the rest of the batter for muffins. Bake muffins for approximately 18 minutes and the loaf for 50 minutes or until done (toothpick inserted into the center comes out clean, or internal temperature of 200F).
