Lemon Chocolate Chip Olive Oil Cake

2 cups all-purpose flour
1 ½ cup sugar
2 pinches kosher salt
¾ teaspoon baking powder
½ teaspoon baking soda
1 ½ cup milk
Zest of one lemon
Juice of one lemon
1 cup extra-virgin olive oil
3 eggs
½ cup dark chocolate chips (Guittard and Ghirardelli), tossed in flour
Chopped pistachios
Fleur de sel
Preheat oven to 350F. Lightly grease a 9” springform pan with parchment paper on the bottom.
In a large bowl combine the flour, sugar, salt, baking powder, and baking soda. In a medium bowl combine the milk, lemon zest, lemon juice, olive oil, and eggs. Pour the wet ingredients into the dry ingredients and stir until combined.
Pour the batter into the pan and lightly stir in the chocolate chips. Sprinkle chopped pistachios and fluer de sel on top. (Note: the nuts and salt sank into the cake. Try tossing them in flour next time?)
Bake for approximately 50 minutes or until done. Cool for 15 minutes and remove from pan to cool completely.
