Banana Saffron Muffins
Adapted from Sugarlaws' Banana Saffron Muffins
- 1 cup flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 bananas, mashed
- 1/2 cup sugar
- 1 tablespoon heavy whipping cream
- 1/4 teaspoon saffron threads, chopped or crushed
- 1 egg
- 2 tablespoons canola oil
Preheat oven to 350F.
In a medium-sized bowl whisk together the bananas, sugar, cream, saffron, egg, and canola oil. Add the flour, baking soda, baking powder, and salt. Spoon batter into six or eight prepared muffin cups.
Bake for 18 minutes or lightly golden brown.
Yields six to eight muffins.
